1 TBS vegetable or olive oil
11/2-2 lbs of sweet Italian sausage
1 large green bell pepper
1 large orange, yellow or red bell pepper
1 large onion, sliced
6 or so medium mushrooms (FRESH!) sliced
1 12 oz can tomato paste
1 28 oz can crushed tomatoes
2-3 cloves garlic, peeled and crushed
1 TBS Italian seasoning
4 cups water
In a large saucepan, brown sausages in oil.  Remove browned sausages from pan.  Saute onions, peppers and mushrooms in drippings for 4 or 5 minutes.  Add garlic, saute 2 more minutes. 

While veggies are cooking,  cut sausages into 2 inch pieces. 

When vegetables are done sauteing, add crushed tomatoes, tomato paste,  4 cups of water, and sausage into pan.  Stir well.  Simmer for one hour,stirring occaisionally.  Add seasonings and continue cooking to desired consistency.  Serve over pasta or rice.  ENJOY!
