Sweet, succulent Italian sausage RULES in cacciatora!
1 TBS vegetable or olive oil
11/2-2 lbs of sweet Italian sausage
1 large green bell pepper
1 large orange, yellow or red bell pepper
1 large onion, sliced
6 or so medium mushrooms (FRESH!) sliced
1 12 oz can tomato paste
1 28 oz can crushed tomatoes
2-3 cloves garlic, peeled and crushed
1 TBS Italian seasoning
4 cups water
In a large saucepan, brown sausages in oil. Remove browned sausages from pan. Saute onions, peppers and mushrooms in drippings for 4 or 5 minutes. Add garlic, saute 2 more minutes.
While veggies are cooking, cut sausages into 2 inch pieces.
When vegetables are done sauteing, add crushed tomatoes, tomato paste, 4 cups of water, and sausage into pan. Stir well. Simmer for one hour,stirring occaisionally. Add seasonings and continue cooking to desired consistency. Serve over pasta or rice. ENJOY!

I know what I said about the Mediterranean diet being generally healthy...this meal is probably the exception. If you are on a fat or cholesterol restricted diet, eat this at your own risk!!
Italian roasted chicken and potatoes
Ingredients:
1 roasting chicken
3 lbs potatoes
6 cloves garlic, peeled and crushed
2 TBS rosemary
1 TBS Italian seasoning
1 medium onion, sliced
1/2 tsp each of onion powder, garlic powder, season salt, pepper
1 TBS olive oil
Preheat oven to 325 degrees.
Wash chicken inside and out and drain. Put in large, greased roasting pan. Insert cloves of garlic and 1 TBS rosemary into cavity of chicken.
Peel and cut potatoes into 2 inch chunks. Put into LARGE bowl with onion, oil, 1 TBS rosemary, 1 TBS Italian seasoning, garlic powder, onion powder, and season salt. Mix thoroughly. Arrange potatoes around chicken in pan. Cook at 325 degrees for APPROXIMATELY 2 hours till done, turn potatoes every 20 minutes or so.
Every cook has their own method for determining the doneness of chicken. I prefer a meat thermometer.
Serve with crusty bread and a salad, if you want. MANGIA!
Writing these recipes was almost an exercise in futility. Like most Italian cooks, I have no recipes.
Whenever I ask a family member for a recipe from "Nona's kitchen", the response is always the same no matter whom I ask...
